The Maillard Project is a Brisbane specialty coffee roaster, café and training hub on Charlotte Street, run by the team behind Coffee Anthology.
Its in-house roastery supplies the café, where the Feature One blend sits beside single origins from Colombia and Ethiopia. The training hub offers roasting lessons and cupping sessions, and a third espresso machine is kept for training. The roastery also bakes for its sister café, Coffee Anthology, a few doors up the street. Weekend Edition lists four espresso and three filter options at the bar.
