HI,COFFEE. Higashitsujii is a light-roast specialty coffee shop and roaster in Himeji. The owners set out to bring light-roasted coffee to a city better known for traditional dark roasts.
Six coffees are on offer at a time, two house blends and four single origins, including an owner's-choice cup called BOSS. On Friday evenings the shop stays open late and serves pour-overs in wine glasses. Beans, drip bags and brewing equipment are sold in store.
