Townsfolk Coffee is a Kanazawa specialty coffee roaster founded in July 2020 by an owner who worked in Copenhagen and Tokyo. It describes its approach as Nordic roasting, which it presents as more than simply roasting light, aiming to show what each bean can do.
The roastery sells specialty beans online, shipping within three business days, and supplies wholesale beans to restaurants and cafés. It also helps people setting up new coffee businesses with equipment.
Its stated aim is to link Japanese and Danish coffee culture, and its café by Tamagawa Park serves the roasts daily.
