About CLAMP COFFEE SARASA
CLAMP COFFEE SARASA is a specialty coffee roaster in Kyoto's Nakagyo Ward, roasting in house at its café in the Nishinokyo area near Nijo Station.
Every batch of beans is hand-sorted twice, once as green coffee before roasting and again after roasting, to pick out defects. The roastery keeps six to eight coffees available at a time, selected to show the character of each origin rather than to fit a single house profile.
Beans are sold by weight at the café for brewing at home. The roastery belongs to the Sarasa group of Kyoto cafés, and the shop opens from 8:00, closing on the last Wednesday of each month.
