Specialty coffee in Georgia

Specialty coffee in Georgia is centred on Tbilisi, where Shavi Coffee Roasters took the coffee shop award at the 2025 European Coffee Trip Awards. Georgia traditionally drank Turkish-style coffee, and specialty roasting is a recent development that roasters describe as shaped by the country's wine culture. Shavi Coffee Roasters, founded by Alsu Karimova and Anastasia Costache, is Georgia's most prominent specialty brand: beyond its ECT award, it won a silver medal at the Global Coffee Awards European edition and opened in Washington, DC, in late 2025. Coffee imports rose by more than 40% in 2025, and international chains have followed.

Tbilisi holds almost all of the country's specialty cafés and both of its listed roasters. Batumi on the Black Sea coast has a smaller scene, and Mestia in Svaneti has a café.

Roasters that shape Georgian specialty coffee include Shavi Coffee Roasters, whose Garage location is also a roastery, and OKRO Coffee Roastery. Expect filter and espresso at the specialty cafés, and Turkish-style coffee still widely available alongside.
