About Hibi Kaffe

Hibi Kaffe is a specialty coffee roaster in Oslo, founded in November 2024 by Japanese-born roaster Ayae Maki Fredheim.

The name means "daily" in Japanese, and the roastery focuses on single-origin coffees for everyday drinking, such as a washed Caturra from Peru. Fredheim runs the business alone and roasts on a ROEST P3000. The roastery shares a space with The Little Pickle bakery in Jens Bjelkes gate, where its own coffee bar serves the beans. Coffee is sold through an online shop and a monthly subscription, and a wholesale portal supplies restaurants, including Maaemo.

Fredheim placed second in the 2026 Norwegian Coffee Roasting Championship.
