About Gentlemen's Roastery Lab
Gentlemen's Roastery Lab is a specialty coffee roaster in central Sofia, launched in 2025 as the successor to Columbus Coffee Lab.
It roasts on Tsar Shishman Street, where it also runs a shop for its own coffee. The team says it monitors every step from bean selection to extraction and roasts fresh each week. The range runs from classic, balanced profiles to rare single-origin microlots from individual farms.
Retail bags come as four house blends: Traditionalist, Explorer, Adventurer and Excentric. The roastery also supplies cafés, restaurants and hotels.
