3 CEDARS COFFEE is an Oita specialty coffee roaster founded in 2016 by Shoji Misugi.
Misugi roasts on a customized 1968 PROBAT UG22 and buys directly from farms in Honduras, Nicaragua, Rwanda and Ethiopia, visiting origins each year. The range typically includes around seven single origins and two blends from light to deep roasts, and local roasters regard the shop highly.
Beans are sold at the Jogyo roastery and a shop in Oiishi, and the company runs the LA ARADA coffee shop in Beppu.
